Crawfish Ring
- 2 tbs gelatin
- 1 cup consomme
- 8 oz cream cheese
- 3/4 cup mayonnaise
- 2 cups chopped, boiled crawfish
- 1 cup celery, chopped
- 1 pimento, chopped
- 2 tbs grated onions
- 1/2 cup chili sauce
- 2 tbs lemon juice
- 2 tsp Worcestershire sauce
- 1/4 cup chopped parsley
- 1 tsp salt
- 1/4 tsp cayenne pepper
- 2 drops pepper sauce
Soften gelatin in 1/4 cup consomme, Heat remaining consomme, add softened gelatin to dissolve. Cool. Beat cream cheese and mayonnaise in bowl until well blended. Add cooled consomme and all other ingredients. Place in a lightly greased 2-quart ring mold. Chill. Serve on lettuce with French dressing, or on crackers as an appetizer.
