Sausage and Spinach Sandwich Loaf

One 1 pound loaf frozen bread dough
3/4 to 1 pound Italian sausage
1 large onion, chopped
One 10 oz pkg frozen chopped spinach, thawed
1/4 tsp crushed red pepper
One 2-1/4 oz can ripe olives, sliced, drained
2/3 cup grated Parmesan cheese
Melted butter or margarine

Thaw bread dough as package directs. Meanwhile remove sausage casings and crumble meat into a frying pan with the onion. Cook over medium heat until meat is browned and onion is limp; discard fat. Squeeze water out of spinach; stir spinach and pepper into pan. On a floured board roll dough into an 11x15 inch rectangle. Scatter meat mixture onto dough to within 1 inch of edges. Sprinkle with olives and cheese, starting with a long side, roll up tightly; pinch ends and seams. Place loaf seam side down on a greased baking sheet; tuck ends under. Brush with melted butter (or margarine) and slash top. Bake in a 350F oven until golden, about 35 minutes. Cut into thick slices. Good hot or cold.
