Cinnamon Rolls

Dough:
1-1/2 cups warm water
1/2 cup Sugar
1/2 cup vegetable oil
1/2 cup plain mashed potatoes
1 egg
3 envelopes dry yeast
3 tablespoons dry milk powder
3 cups unbleached flour
2-1/2 to 3 cups bread flour
1/3 cup butter softened
3/4 cup brown sugar
1-1/2 tablespoons ground cinnamon

Frosting:
1/2 cup butter, softened
2 tablespoons flour
1 cup confectioner's sugar
1 teaspoon vanilla

Mix the warm water, sugar, oil, potatoes, egg and yeast. Mix well. Add the milk powder and the all-purpose flour. Gradually add bread flour until workable. Knead dough for 10 minutes. Grease a large bowl; place dough in; cover with a towel for 1-3/4 hours. Punch dough down. Re-grease bowl; cover for 1 more hour. Punch dough down again; break into 3 portions. Roll each portion in 12 x 8 inch rectangle on a floured board. Sprinkle each with about 1-1/2, tablespoons butter, 1/3 cup brown sugar and 1/2 tablespoon cinnamon. Starting at the short side of rectangle, roll into a log and slice nine 1 inch slices. Put into three 8 or 9 inch pans. Bake at 325F for 10 minutes. Raise oven to 350F and bake for 5 more minutes. Cool. Mix all ingredients for frosting together until smooth. Frost rolls.
