Carrot Bread
- 3/4 cup salad oil
- 1 cup sugar
- 1-1/2 cups sifted flour
- 1 tsp soda
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp salt
- 2 eggs
- 1 cup grated raw carrots
- 1/2 cup chopped pecans
Pour into greased and floured 9 x 5 x 3 inch loaf pan. Bake in moderate oven (360F) for 50 to 60 minutes. Remove from oven and let cool for 5 minutes before removing from pan. Finish cooling on cake rack.
