Chili Con Corn Bread
- Two 15 oz cans chili or 4 cups home made chili
- 1 egg slightly beaten
- 1/2 cup milk
- 2 tbs vegetable oil or melted shortening
- 1 cup yellow corn meal
- 1-1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup (4 oz) grated sharp cheddar cheese, divided
Preheat oven to 400F. Pour chili into lightly greased 8 inch square baking pan. Combine milk, corn meal, baking powder, salt and 1/2 cup cheese. Stir until smooth; pour over chili slowly. Sprinkle remaining 1/2 cup cheese evenly over batter. Bake 30 to 35 minutes. Cool 5 minutes.
