Fig Muffins
- 1/4 cup margarine, softened
- 1/4 cup sugar
- 1 egg
- 1/2 cup light corn syrup
- 1/2 cup water
- 2 cups all purpose flour
- 4 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1 cup cooked figs or 17 oz jar figs, drained and chopped
- 3/4 cup bread crumbs
Cream margarine and sugar until light and fluffy. Add egg and corn syrup; mix well. Blend in water, flour, baking powder, salt, cinnamon, ginger, and soda. Add figs, mixing gently; stir in bread crumbs.
Fill greased muffin pans two thirds full, and bake at 350F for 15 to 20 minutes.
Yield: 12 muffins.
