Zucchini Nut Bread 1

2 cups brown sugar

3 eggs

1 cup cooking oil

2 cups zucchini (boiled mashed)

1/2 tsp baking powder

1 tsp baking soda

2 tsp cinnamon

1 cup chopped pecans

2-1/2 cups flour (all-purpose)

Mix all ingredients thoroughly. Pour in greased pan 13 x 9 inch. Bake in 350F oven for 50 minutes.

Yields 24 pieces.
