Mixed Vegetable Quiche

9-inch un-baked pie shell, at room temperature
1/2 cup shredded cheddar cheese
1 cup cooked mixed vegetable, drained
6 eggs
1-1/2 cup half & half or milk
2 tbsp. instant minced onion
1/2 tsp. oregano
1/2 tsp. salt

Sprinkle pie shell with cheese, then vegetables. Beat eggs, half and half, onion, oregano and salt together until blended. Pour over cheese and vegetables. Bake in preheated 375F oven 30-35 minutes or until knife inserted near center comes out clean. Let stand 5 minutes before serving.

Makes 6 servings
