Pork Chops and Rice Casserole

4-6 pork chops, fat trimmed
1 large onion, chopped
1 green pepper, chopped
1 clove garlic, minced
2/3 cup uncooked rice
1 can Cajun tomatoes
1 cup boiling water or beef broth
1/3 cup salad oil
1 teaspoon chili powder
1 teaspoon sugar
1 bay leaf
Creole seasoning, to taste

Brown pork chops in oil hot skillet and remove to casserole. Saute onion, green pepper and garlic in pan drippings until lightly browned. Add rice and saute until golden. Add remaining ingredients and simmer for a minute. Pour the mixture over chops. Cover and bake 1 hour at 350F, lowering temperature for last 5 minutes.

Variations:
Delete sugar or add hot sauce. Serve hot.
