Crawfish or Shrimp Casserole, Quick and Easy

1 pound crawfish or shrimp
1 can cream of mushroom soup
1 can cream of shrimp soup
1 large onion
1 small bell pepper
1 stick margarine or butter (1/4 lb)
1 box Mahatma Yellow Rice
1 can Rotel tomatoes

Preheat oven to 350F. Cook yellow rice according to directions on box. Use two packages of rice. Saute onions and bell pepper in butter or margarine until onions are tender. Add Rotel tomatoes, cream of mushroom, and shrimp soup and cook 15 minutes. Add crawfish or shrimp. Mix all the above. Cook at medium heat until liquid cooks out. Mixture must be thick. Mix cooked rice and mix all ingredients in a large pan. Spray a little PAM. Bake for 30 minutes. Garnish with dry parsley. Serve as it is with green salad and scalloped potatoes.
