Eggplant Casserole 7

2 pounds lean ground meat
1 large onion, chopped
2 bell peppers, chopped
4 pods garlic, chopped
8 large eggplants
Salt Red pepper black pepper
Sugar (to taste)
Progresso bread crumbs

Preheat oven to 350 F. Brown ground meat. Add onions, bell peppers and garlic. Saute until clear. Add a little water and cook until, meat is tender. While meat is cooking, peel and cube eggplant and soak it in warm, very salty water for a half-hour or longer. Rinse eggplant and drain. Add eggplant to meat. Add sugar to taste. Cook uncovered, until ready for casserole dish. Grease dish, add mixture and sprinkle top with bread crumbs. Bake 30-40 minutes. Serve as a side dish.
