Potato Casserole 2

5 pounds red potatoes
3-link package hot Savoie sausage
3 cans cream of mushroom soup
1 white onion
Cayenne pepper
Salt
1 bag shredded Velveeta cheese (optional)

Special utensil: 6 inch deep glass dish with cover.

Preheat oven to 350F. Peel potatoes and onion. Cut into 1/2 inch slices, placing in three separate piles. Lay a row of potatoes at the bottom of dish. Add layer of sausage, then a layer of onions. Add one can of cream of mushroom soup on top of layers and season to taste. Follow this procedure two more times until all ingredients are used, leaving layer of potatoes on top. Cover casserole dish and bake approximately 40 minutes or until potatoes are tender. If desired, uncover dish and sprinkle with cheese on top. Return to oven 5 minutes or until cheese is melted. Serve on top of rice as a meal or as side dish.
