Pineapple Cheese Casserole

One 20-ounce can pineapple chunks
1/2 cup sugar
3 tablespoons all-purpose flour
1 cup shredded Cheddar cheese
1/4 cup melted butter or margarine
1/2 cup buttery cracker crumbs (Ritz or Waverley crackers)

Preheat oven to 350F. Drain pineapple, reserving 3 tablespoons of juice. Combine sugar and flour and stir in 3 tablespoons juice.

Add cheese and pineapple, mix well. Spoon into a greased 2 quart casserole dish. Combine melted butter and cracker crumbs. Stir well. Spoon over pineapple mixture. Bake at 350F for 20 to 30 minutes, uncovered until crumbs are lightly brown.

Serves 4 to 5.
