Cheese Casserole

First Layer:
1 lb lean ground beef
1 tsp salt
1/4 tsp pepper
1 clove garlic, mashed

Cook meat and seasonings in skillet until pink color disappears. Drain well. Spoon with a 2-quart baking dish.

Second Layer:
2-1/2 to 3 lb summer or zucchini
1 squash
One 4 oz can chopped green chili peppers
1 med onion, chopped fine
2 tbs butter or margarine
1 cup shredded mild Cheddar cheese

Cook squash in salted water until tender. Drain well. Mash and whip in chil1 pepper, onion and butter. Spread over meat mixture and sprinkle with shredded cheese.

Third Layer:
2 eggs
2 cups cottage cheese
2 tsp chopped parsley, optional
2 tbs grated Parmesan cheese

Beat eggs until light; fold in cottage cheese and parsley. Spoon over squash layer. Sprinkle with Parmesan cheese. Bake in preheated 350F oven 35 to 45 minutes, or until set.

Makes 6 to 8 servings.
