Apple Cake 8

2 cups Whole Wheat Flour
1/4 cups Toasted Wheat Germ
2 tsp Baking Soda
1 tsp Cinnamon
1 tsp Salt
1/2 tsp Nutmeg
4 cups Diced Apple
2 cup Brown Sugar
1/2 cup Vegetable Oil
1 cup Chopped Pecan
2 Beaten Egg
1 tsp Vanilla
1/4 cup Powdered Sugar

*** Sift first six ingredients and set aside. Peel and dice apples. Combine apples, brown sugar, oil, vanilla, eggs and pecans in a large bowl. Add in flour mixture. Stir with wooden spoon to blend well. Spread into a lightly greased 13x9x2 inch baking pan. Bake for 50 minutes in a 350F oven. Cool in pan. If desired, you can sprinkle with powdered sugar.

Yield: 12 Good-Size Pieces.
