Fruits and Nuts Bread Pudding

1 loaf (20 ounces) white bread, cut in 1 inch pieces
1 cup white sugar
4 eggs
3-1/2 cups milk cinnamon
1/2 teaspoon salt
1 can (21 ounces) apple pie filling
1 cup brown sugar
2 cups coarsely chopped walnuts
1 cup golden raisins (optional)
1 cup melted butter or margarine
18 ounce can crushed pineapple with juice
1 small box coconut instant pudding
1 teaspoon vanilla extract
1 teaspoon almond extract
2 tablespoons lemon juice

Preheat oven to 350F.

In large bowl, combine bread cubes, sugar and dry instant pudding. Toss these together. Set aside. In another bowl, beat eggs, milk, cinnamon, salt and flavorings until foamy. Add remaining ingredients, mix well. Cover and refrigerate 1-2 hours allowing flavors to blend. Pour into 9 x 12 inch pan. Bake 45-50 minutes or until firm. Cut into squares.

Serve warm or cold with whipped cream or your favorite sauce.
