Doll Cake

Cake:
1 Pillsbury lemon cake mix with pudding in it
1-1/4 cups water or buttermilk
1/4 cup oil
3 egg whites or 2 eggs
Frosting:
1 lb. powdered sugar, sifted
1/2 cup Crisco shortening
4 ounces cream cheese
4 tablespoons cold water or juice
1 teaspoon flavoring of choice, if use water
Food coloring, as desired

Cake:
Mix cake mix, egg, oil with electric mixer on Low to moisten. Beat 2 minutes on High. Pour into a well-greased "Wilton" type doll cake pan. Bake at 350F for about 55 minutes or until center done. Remove rod in center of pan; turn out on plate to cool.

Frosting:
Beat powdered sugar, Crisco, cream cheese, juice or water, flavoring and food color until smooth. Spread a smooth covering of frosting on cake. Fill pastry tube. Insert doll head and decorate as desired, using various tips.

Serve with mousse, whip Jell-O, sherbet, ice cream or fresh fruit as strawberries.
