Preheat oven to 275F.
Meringue shell:
Beat egg whites and cream of tartar until foamy. Beat in sugar, 1 tablespoon at a time; continue
beating until stiff and glossy. Do not under beat. On brown paper-lined baking sheet, shape
meringue into a 9-inch circle, building up side. Bake 1-1/2 hours. Turn oven off and leave in oven
with door closed 1 hour.
Remove from oven and finish cooling.
Filling:
Blend cream cheese, 1/2 cup sugar and vanilla. Gently fold whipped cream into cream cheese
mixture. Pile into cooled meringue shell, making a small well in center. Fill with fresh fruit or pie
filling of your choice (i.e. cherry, blueberry, raspberry pie filling ). Chill before serving. Slice and serve.
