Classic Glazed Cheese Cake

Crust:
1-3/4 cups Graham cracker crumbs or about 20 graham crackers, crushed
3/4 cups walnuts, finely chopped
1 teaspoon cinnamon (a must)
1/2 cup butter, melted
Filling:
3 eggs, beaten well
Two 8-ounce packages cream cheese, softened.
1 cup white sugar
1/4 teaspoon salt
2 teaspoons vanilla extract
1/2 teaspoon almond extract
3 cups sour cream
Glaze:
1 pint fresh strawberries
1 cup water
2 tablespoons corn starch
1/2 cup sugar

Preheat oven to 375 F. degrees. Thoroughly mix ingredients for crust. Press on bottom and sides of 9-inch spring form pan. Sides should be about 1-3/4 inches high.

Filling:
Combine eggs, cream cheese, sugar, salt, vanilla and almond extract. Beat until smooth. Blend in the sour cream. Pour into crumb crust. Bake about 35 minutes or just until set. Cool. Chill thoroughly about four hours. (Filling will be soft and set.)

Glaze:
Crush strawberries. Add water and cook two minutes. Sieve or leave crushed if desired. Mix cornstarch with sugar and stir into hot berry mixture. Bring to boil stirring constantly. Cook and stir until thick and clear. Add a few drops of red food coloring, if desired. Cool to room temperature.

Place extra whole strawberries atop chilled cheese cake. Pour glaze over them. Chill about two hours.

Serves 8-10.
