Mix flour and baking soda. Beat butter and peanut butter in a large bowl with electric mixer until creamy. Add sugars and beat until fluffy. Beat in egg and vanilla until well blended. With mixer on low gradually beat in flour mixture just until blended. Roll heaping teaspoon of dough into balls. Place 1/2 inches apart on ungreased cookie sheets. Flatten with fork in cris-cross pattern. Preheat oven to 375F. Bake 10-12 minutes until lightly browned. Cool on cookie sheets 1 minute before removing to rack to cool completely. Store in a tightly covered container.
Makes 60 cookies.
