Lemon Pie 1

One 3-ounce package Jell-O lemon gelatin
1 cup boiling water
1 or 2 teaspoons grated lemon rind
1/2 cup lemon juice
1 egg yolk
1-1/3 cups or a 15 ounce can sweetened condensed milk
1 box vanilla pudding
1 egg white
1 baked 9 inch pastry shell
or
1 ready made crumb crust
Whipped topping, optional

Dissolve gelatin in boiling water. Add lemon juice and grated lemon rind. Beat egg yolk slightly. Slowly add gelatin, stirring constantly. Add milk and pudding, stirring until blended. Chill until slightly thickened. Beat egg white until stiff peaks form. Fold into gelatin mixture. Pour into pastry shell. Chill until firm. Garnish with whipped cream, if desired.
