Bread Pudding 2

9 slices bread, diet
1 cup sugar
1 large can evaporated milk, skim
2 cup milk, skim
1 teaspoon vanilla
4 egg yolks
1/3 cup melted margarine (lite)
Meringue:
4 egg whites
1/4 teaspoon cream of tartar
1/4 cup sugar

Preheat oven to 450F. Break bread in small pieces in a large mixing bowl. In separate bowl, mix sugar, milk, egg yolk, and melted butter. Pour over bread pieces, then pour in pan sprayed with PAM. Bake about 20 minutes or until set in middle.

Meringue:
Beat 4 egg whites and cream of tartar until soft peaks form. Add: 1/4 cup sugar gradually, and continue beating, until stiff peaks form. Layer on top on pudding and bake until lightly browned.

Serves 12.
