Amaretto Cake

One 18-1/2-ounce box yellow cake mix
One 4-serving box Instant pistachio pudding
1 cup Crisco oil
4 eggs
2/3 cup orange juice
3-1/2 cup Amaretto
1-1/2 cup pecans, chopped
Glaze:
1 cup sugar
1 stick margarine (1/4 lb)
1/4 cup orange juice
1/4 cup Amaretto
Powdered Sugar Glaze:
1 cup powdered sugar
Amaretto
Orange Juice

Preheat oven to 325F. In large bowl, blend all ingredients together, except eggs. Add eggs, 1 at a time, beating well after each addition. Pour into a greased and floured 10 inch bundt pan, or use Bakers Joy. Bake at 325F for 55 minutes.

Glaze:
Mix all ingredients and bring to a boil, then simmer for 4 minutes. Pour over cake while still in pan. Let stand for 20 minutes. Invert onto serving plate. Drip with powdered sugar glaze.

Blend enough orange juice and amaretto to make sugar mixture thick enough to drip on cake. Use when cake cools.

Serves 16-18.
