Coconut Pound Cake 2

2/3 cups Crisco cooking oil
1/2 lb margarine, softened
2/3 cups sugar
5 large eggs
1 teaspoon coconut extract
1 teaspoon vanilla extract
3 cups flour
1 teaspoon baking powder
1 cup milk
1 cup coconut
Glaze Ingredients:
1 cup powdered sugar
1 tablespoon mayonnaise
1 tablespoon water
1/2 teaspoon white vanilla or coconut extract

Preheat oven to 325F. Cream margarine, Crisco and sugar. Add eggs, one at a time; cream. Add coconut and vanilla extract. Add flour and milk alternately. Add baking powder and beat mixture well, Add coconut and mix well. Pour into 10 inch tube baking pan. Bake for 1-1/2 hours. Cool 10 minutes in tube pan on top of wire rack. Loosen cake and turn onto 1 cup cake plate.

Glaze:
In small mixing bowl, put the powdered sugar, mayonnaise and water together. Blend well until sugar is dissolved well. Glaze cake when slightly warm.

Serves 12-15.
