Banana Nut Cake 2

Cake:
1 cup cooking oil
1-1/2 cups Sugar
2 eggs, beaten
2 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
3 large bananas, ripe, mashed
1-1/2 cups pecans, chopped
Icing:
1 pound powdered sugar
1 stick margarine (1/4 lb)
1 small banana, ripe, mashed
1/2 cup pecans, chopped
1/2 cup teaspoon banana flavoring

Preheat oven to 350 F. Combine all cake ingredients in a bowl and stir until well blended. Spray bunt pan with non-stick cooking spray. Pour mixture into pan. Bake 55-60 minutes. Test for doneness with wooden pick. Remove from oven and set pan on cooling rack for 5 minutes. Remove cake from bundt pan.

Icing:
Combine sugar with margarine on low heat until dissolved and melted. Blend in banana, pecans and banana flavoring. Pour over cake.

Serves 12.
