Date Banana Cake

1/2 cup butter
1/2 cup sugar
1 cup bananas, mashed
1 cup dates, chopped
1 cup pineapple, crushed and drained well
2 cups flour
1/2 teaspoon baking soda
1 teaspoon baking powder
1/2 cup sour milk or buttermilk
1/2 cup nuts, chopped
Icing:
1/2 cup butter
1 cup brown sugar, packed
1/4 cup milk
2 cups confectioners sugar (more If needed)
Pecans or walnuts- (optional)

Preheat oven to 350F. Cream butter and sugar thoroughly. Add bananas, dates and pineapple. Sift dry ingredients three times; mix in nuts. Add alternately with sour milk. Bake 35-40 minutes in two 8 inch cake pans or one 9 x 12 inch pan. Cool on wire rack.

Icing:
Melt butter in medium saucepan; add brown sugar. Boil over low heat 2 minutes, stirring constantly. Add milk, continue stirring. Add sifted confectioners sugar. Beat after each addition. Add nuts or press into sides of cake. Ice cake.

Serves 12-16.
