Cheese Cake 3

1/3 cup margarine, melted
1-1/2 cups Graham cracker crumbs
1/4 cup sugar
Three 8-ounce packages cream cheese
1-1/2 cups sugar
16 ounces cream cheese
1 teaspoon vanilla extract
3 eggs
Topping:
1/4 cup sugar
16 ounces sour cream

Preheat oven to 475F.

Special cooking utensils: Spring form pan

Combine Graham cracker crumbs, margarine and sugar in bowl. Press firmly over bottom and part way-up side of large spring form pan. Combine cream cheese, sugar, eggs, sour cream and vanilla extract in food processor; process until smooth. Pour over crust and bake 10 minutes. Lower oven to 300F and bake for 50 minutes. Combine sugar and sour cream, mix well and pour over baked cheese cake. Return to oven and bake 10 minutes at 350F. Chill thoroughly before serving.
