Peach Cobbler 2

Topping:
1 cup flour
6 teaspoons Sweet & Low
1-1/2 teaspoons baking powder
1/4 teaspoon salt
1/4 cup low-fat margarine
1/4 cup skim milk
1 egg, slightly beaten or egg substitute equal 1 egg
Filling:
1-1/2 tablespoons cornstarch
1/4 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1-1/2 teaspoons ground cinnamon
1/2 cup brown sugar substitute
1/2 cup water
4 cups peaches, sliced
1 tablespoon lemon juice

Preheat oven to 400F. (375F. if using glass dish)

Put first 4 ingredients into medium bowl. Cut in margarine until coarse crumbs form. Combine milk and eggs. Add to dry ingredients, stirring until moist. Set aside.

Filling:
Prepare peaches. Combine first 6 ingredients in large sauce pan. Cook and stir until thickened. Add peaches and lemon juice. Cook about 5 minutes or until peaches are hot and starting to soften. Place peach mixture into 8 inch square pan. (ungreased). Spoon topping on in mounds. Bake 20-25 minutes or until top is nicely browned. Spoon into bowl while warm. Serve with low-fat whipped cream or low-fat ice cream.
