Pecan Brittle 1

3 cups sugar
1 cup white Karo Syrup
1 cup water
1 stick margarine (1/4 lb)
3 cups pecans
2 teaspoons soda
Pam cooking spray
Special utensils:
Candy thermometer

Mix sugar, Karo Syrup, and water in a heavy pot. Cook until mixture becomes thick or until mixture forms a thread when dripping from the spoon Add margarine and pecans. Cook and stir until thermometer reaches 290F. Remove from heat and stir in soda, then quickly pour onto cookie sheets sprayed with Pam. Let harden and crack with a fork.
