Apple Ice

5 cups (about 1-1/2 lb) apples, cored and sliced
3/4 cup sugar
1 cup water
1/2 tsp grated lemon peel

Combine apples, sugar and water in saucepan. Bring to boil; simmer about 5 minutes or until tender. Puree in food processor or blender; stir in lemon peel. Pour unto 8 or 9 inch metal pan and freeze until firm. Return to food processor or blender and process until fluffy. Pack in container, cover tightly and freeze.

Makes 6 to 8 servings.
