Cajun Cake 2

2-1/2 cups crushed pineapple, drained
1-1/2 cups sugar
1/2 tsp salt
2 tsp soda
2 eggs
2-1/2 cups flour

Combine all ingredients and mix well. Pour into 8x12 inch baking pan that is well greased. Bake at 350F for 30 minutes.

Icing:
1 cup evaporated milk
1/2 cup chopped pecans
1 cup coconut
1 cup sugar
1/4 lb margarine

Heat sugar, margarine and milk to boiling. Stir once. Boil for 7 minutes, add coconut and pecans. Beat until thick and cool. Pour over cake while still in pan. Cut into squares and serve.
