Lemon Pecan Delight

Crust:
2 cups flour
1 or 1/2 cup of unsalted butter
1 cup chopped pecans

Set oven at 350F. Melt unsalted butter. Add flour, mix together until crumbly, then mix in chopped pecans well. Shape in a 8 inch or 9 inch baking pan. Bake until golden brown. Let cool.

Filling:
One 8 oz box of vanilla instant pudding
Two 8 oz packs of lemon instant pudding

Add pudding mix to six cups cold milk. Beat slowly with rotary beater or at lowest speed of electric mixer until well blended, about two minutes. Lot set until ready to pour over crust.

Topping:
One 8 oz box of confectioners powdered sugar
Two 8 oz packs cream cheese
One 12 oz or 16 oz Cool Whip

Add cream cheese and Cool Whip. Add powdered sugar until thickened using an electric mixer at low or medium speed. Pour filling into crust, then topping. Lot set until ready to serve.

Serving: 8 or more.
