Miniature Pecan Pies

Crust:
One 8 oz container (soft) cream cheese
1 cup all purpose flour
1/4 lb margarine
1 tbs powdered sugar

Mix all above ingredients together. Once dough is formed take 1 tsp of dough and press into greased mini muffin pan.

Enough dough to make 2 dozen pie shells.

Pecan Filling:
3/4 cup brown sugar
1 egg
1 cup finely chopped pecans
1 tbs margarine
1 tsp vanilla extract

Mix all above ingredients together in a heavy sauce pan over low heat, stirring often. Once filling becomes creamy and all ingredients have dissolved, remove from heat. Take 1 tsp and pour in each pie shell. Bake pies at 300F until crust and filling are golden brown.
