Liqueur Creme de Menthe

1-1/3 cups Vodka
1-1/4 cups Simple Syrup No. 1
1/2 tsp Peppermint Extract
2 tsp Vanilla Extract
Green Food Coloring

Combine vodka, syrup, peppermint extract and vanilla extract in a (4 cup) jar. Add food coloring for the desired shade of bright green. Close jar tightly. Store for 1 week before using.

Yield: 1-1/2 Pints.

Simple Syrup No. 1
2 cups Water
1 Lemon
3 cups Granulated Sugar

*** Use paring knife to pare zest of the lemon. Blot on paper towel or napkin to remove oil. Combine sugar, peel and water in a large saucepan. Heat to boil while stirring often. Lower heat. Simmer for 5 minutes. Strain into glass container. Cool to room temperature before preparing liqueurs.

Yield: 3-3/4 Cups or Enough for 3 Batches.
