Glossary of Combination Terms

Blend: Combine all ingredients until they are smooth and uniform.

Cream: Beat just enough to make mixture smooth, light, and fluffy.

Cut In: Mix in a solid fat with dry ingredients by chopping with two knives or fingers or using a pastry blender.

Dredge: Coat with flour or sugar.

Dust: Sprinkle lightly.

Fold: Combine lightly using two motions. A downward cut through the mixture then sliding across bottom and up the side, turning mix over.

Toss: Tumble ingredients using a light lifting motion.

Whip: Beat mixture rapidly (add air).
