Crab Gumbo

1 doz. hard-shelled crabs
1 lg. can cut okra, drained
1 stalk celery, minced
1 lg. onion, minced
1 bell pepper, minced
2 tomatoes or 1/2 can tomatoes
1 tbsp. shortening
1-1/2 tbsp. flour
Salt and pepper to taste

Make roux. Add minced onions, celery and bell peppers and saute until vegetables are soft. Add okra which has been cut fine. Add tomatoes. Saute a few more minutes. Then add 2 quarts of boiling water gradually. Scale crabs, remove shells and clean them. Add cleaned crabs to gumbo mixture, allowing all to boil slowly for about one hour. Season to taste. Serve over rice.
