Quick Minestrone Soup

3-1/2 cup tomato juice
1 cup low sodium ready to serve chicken broth
1/2 cup chopped onion
1 tsp. minced garlic
1/2 tsp. dried oregano leaves, crushed
1/2 tsp. dried basil leaves, crushed
1/2 cup diced zucchini
1/2 cup diced potato
1/2 cup sliced carrot
1/2 cup diced green pepper
1/2 cup cooked or canned kidney beans
3/4 cup cooked small shell pasta

In 3 quart saucepan, combine tomato juice, chicken broth, onion, garlic, oregano and basil. Over medium high heat, heat to boiling. Add zucchini, potato, carrot and green pepper. Reduce heat to medium. Simmer, uncovered, 25 minutes or until vegetables are tender crisp. Add kidney beans and pasta; heat through.

Makes 6-1/2 cups or 8 servings.
