Onion Soup 1

1 cup sliced onion
1 tbs butter or margarine
One 10-1/2 oz can beef consomme
1 can water
Dash of black pepper
Dash of sherry (optional)
1 cup plain croutons
1/2 cup shredded Swiss cheese

Saute onion in butter until soft. Combine consomme and water and bring to a boil. Add sauted onion and season with pepper. Reduce flame to simmer and cook for 30 minutes. Line the bottom of a 1-1/2 quart oven-proof casserole or 4 individual bowls with croutons. Sprinkle cheese over croutons. Add sherry to consomme mixture and pour over croutons. Bake in a gas oven at 400F for 10 to 15 minutes or until top is bubbly. Serve hot.

Yield; 4 servings

*NOTE:
Toasted French bread can be used instead of croutons.
