Country Brunch Wild Rice Medley
- 2 tbsp. butter or margarine
- 1/2 lb. smoked ham, cut into thin strips
- 1/2 cup chopped onion
- 1/2 cup chopped green pepper
- 1-3/4 cup water
- 1 pkg. (6 oz.) Long Grain & Wild Rice
- 2 hard cooked eggs, coarsely chopped
- 1/2 cup (2 oz.) shredded Cheddar cheese
Melt butter in 10-inch skillet. Add ham, onion and green pepper and cook over medium heat 2 to 3 minutes. Add water and contents of rice and seasoning packets. Bring to a vigorous boil. Cover tightly and simmer until all water is absorbed, about 5 minutes. Stir in eggs and sprinkle with cheese.
