Brown Rice Patties
- 3 cups cooked brown rice
- 1/4 cup chopped fresh parsley
- 1 cup grated carrots
- 1/2 cup finely chopped onions
- 1 clove garlic, minced
- 1 tsp salt
- 1/4 tsp pepper
- 2 eggs, beaten
- 1/2 cup whole wheat flour
- 1/4 cup vegetable oil
Combine all ingredients except oil. Form into 12 patties, pressing firmly with hands. Fry in heated oil until brown, turning once.
