Chicken Liver Pilaf
- 1-1/2 cups chopped onions
- 1-1/2 cups sliced celery
- 1 cup sliced fresh mushrooms
- 1 pound chicken livers, cut in half
- 3 tbs vegetable oil
- 1 tsp each salt and basil
- 1/8 tsp nutmeg
- 1 tsp whole wheat flour
- 2 tbs nutritional yeast
- 3 cups cooked brown rice
Saute onions, celery, mushrooms, and livers in heated oil until vegetables and livers are done. Add seasonings, flour, and yeast. Cook 1 minute, stirring constantly. Add rice. Continue cooking until rice is thoroughly heated.
