Eggplant Rice Dressing III
- 1-1/2 cups eggplant, boiled, drained
- 3/4 cup chopped onion
- 1 cup chopped bell pepper
- 1/2 lb ground meat
- 1/4 cup cooking oil
- 2 tsp salt
- 1-1/2 cups cooked rice
- 1/4 tsp red pepper
Heat oil, saute onions, pepper, meat with seasonings. Cook 20 minutes, add eggplant. Add cooked rice. Dish and trim.
