Beef Brisket

5 lb fresh beef brisket, trimmed
1 tsp salt
1/2 cup ketchup
1/4 cup white vinegar
1 tbs worcestershire sauce
1-1/2 tsp liquid smoke
1/4 tsp pepper
1/2 cup finely chopped onion
1 bay leaf

Heat oven to 325 degrees.

Rub surface of beef with salt. Place in ungreased rectangular pan, 13x9x2 inches. Mix remaining ingredients; pour over beef. Cover and bake about 3 hours or until beef is tender. Cut thin diagonal slices across grain at an angle from 2 or 3 sides of the beef. Spoon any remaining pan juices over sliced beef if desired. Remove bay leaf.

Yield: 12 servings
