Beef Stew VII

1/2 cup oil
1/2 cup flour
2/3 cup onion, chopped
1/2 cup celery, chopped
1 pound beef stew meat, chopped
1/2 cup parsley, chopped
1-1/2 teaspoons salt
1/2 teaspoon pepper
dash garlic powder
1/2 teaspoon Tony Chachere's Seasoning
1 cup mushrooms, chopped
4 cooked boiled potatoes, chopped
6 carrots, chopped
2-1/4 cups hot water

Make roux in large heavy iron pot. Add mushrooms, onions, celery chopped stew meat. Add salt, pepper, garlic powder, Tony's Chachere's Seasoning. Add water, cover and cook until meat is tender, 2-3 hours. When meat is tender, add cooked potatoes and carrots.

Serves 6.
