Vegetable Beef Stew

1-1/2 pounds stewing meat
1/3 cup celery
2 carrots, sliced
1 medium onion. sliced
1/4 cup bell pepper
5 or 6 medium potatoes
1/2 cup roux to thicken
Salt and pepper to taste

Put 3 quarts of water in medium pot. Add all ingredients and cook until meat is tender, about 2 hours over medium heat.

Serves 10-12.
