Chicken Quesadillas 1

2 boneless, skinless chicken breasts
2 cups Colby or Cheddar cheese
6 tortillas, 8 to 10-inch diameter
1 small tomato, chopped
1/4 cup green onions
2 tablespoons canned, green chili peppers, chopped
Fresh cilantro or parsley, chopped

Preheat oven to 350F. In a skillet, cook chicken. Sprinkle 1/3 cup cheeses over tortilla shell. Top cheese with remaining ingredients. Fold tortilla in half. Place on ungreased cookie sheet. Bake 5 minutes or until cheese is melted. Top with remaining cheese. Serve quesadillas whole or cut each into wedges or strips, beginning cuts from center of folded side. Serve with lettuce, sour cream, black olives, salsa. and tomatoes (optional)
