Homemade Beef Enchiladas

2 pounds ground beef
1 small onion, chopped
1/2 bell pepper, chopped
1 can retried beans
1 package 3 inch round flour tortillas
1 block Cheddar cheese, grated
2 cans enchilada sauce
Salt and pepper

Preheat oven to 350 F. Brown ground meat and drain fat. Add onions and bell pepper and saute until tender. Season with salt and pepper. Add refried beans and simmer 10 minutes on low, stirring often. Remove beef and bean mixture from stove. Spread 2 tablespoons mixture on tortilla, then roll and place in a greased baking pan. Pour enchilada sauce over the rolled tortillas. Put as much grated cheese on top as you like and put in oven 5-10 minutes or until cheese is melted.

Serves 4.
