Ribs a la Mode

2 pounds baby back ribs
1/2 cup vinegar
1 bunch broccoli
1 medium onion, chopped
1 medium bell pepper
1 tablespoon Zatarain's Creole mustard
1/4 cup margarine
Zataran's Creole seasoning, to taste
Non-stick cooking spray
1 large can pineapple rings
1 small jar cherries

Preheat oven to 350 F. In mixing bowl, mix seasoning, vinegar, mustard, onions and bell pepper. Spread over and rub entire ribs thoroughly Set in refrigerator and marinate about 2 hours. Arrange in a 9 x l3 inch baking pan. Bake 30 minutes. Remove and place broccolli that has been separated into individual spears around pan of ribs. Place pats of margarine. Replace pan in oven and continue baking another 35 minutes. Remove from oven and cut ribs into sections. Very appealing and colorful dish.
