Cajun Okra-Green Chili Stew
- 2 lb cut okra
- 2 lb ground chuck
- 2 onions, chopped
- 1 can pinto beans
- 1 can tomatoes
- 1 cup water
- 2 cans chopped green chilies
- 3 tbs beef bouillon
- 1 tbs sugar
- 2 tbs Creole seasoning
- 2 tbs garlic
- Monterey Jack cheese
- Floured tortillas
- 4 large potatoes, cubed
Brown beef and onions, drain. Add everything except okra, cheese and tortillas. Cook uncovered 1 hour. Add okra and cook 40 minutes longer. Serve in bowls with cheese sprinkled on top and warm tortillas dunked into stew as you eat or serve over rice.
