Chicken Pie 2

Pastry:
1 cup plain flour
1/2 cup tsp salt
1/3 cup shortening
2 tbs water

Cut shortening into flour in small bowl, add salt and sprinkle the water on the top. Mix lightly. May add small amount of water to moisten all of flour. Roll out thinly for top of pie.

Filling:
6 tbs margarine
6 tbs flour
1/2 tsp salt
1/4 tsp pepper
1-3/4 cup chicken broth
2/3 cup rich milk
2 cups cut up cooked chicken
1/4 cup pimento

Melt margarine, blend in flour and seasonings. Cook, stirring until smooth and bubbly. Stir in broth and cream, bring to boil, stir constantly, boil 1 minute. Stir in chicken, pimento. Pour into baking dish, top with pastry. Bake 350F until crust is brown, about 15 minutes.
